Student Peter Bickerton makes the pampered stars of I’m A Celebrity look complete wimps for making a fuss over scoffing bugs.
The creepy-crawly connoisseur tucks into locusts for breakfast, crickets for lunch and waxworms for dinner – and estimates he’s wolfed down 16,000 insects in the past three years.
He started off blending locusts with beef to make burgers. But he found they were so delicious he was happy to ditch the meat altogether.
‘The trick to cooking bugs is seeing them as you would any other meat,’ the 24-year-old said. ‘It’s about looking at a cricket as if it’s a chicken fillet or a king prawn.
‘You can whack some locusts in sweet chilli sauce for a stir-fry.’ The plant sciences PhD student at Manchester University was inspired to change his diet when one of his uncles died of a heart attack aged 45.
He wanted to avoid the same fate and learned from his studies that insects were low in cholesterol.
He gets them from a breeder who sells them as food for pet birds – but pays a premium because they’re a niche product. A bag of locusts is about £9.
TRY HIS RECIPE FOR WAXWORM TACOS
Fry 90g of waxworms with a chopped onion for ten minutes.
When they are nice and brown, scoop the mixture into four mini tortillas.
Add a dollop of guacamole and salsa, season to taste and enjoy
